For me the transition from the stage to the dining room was a natural evolution. As a former dancer, I traded my pointe shoes for the fast paced pirouettes of of the hospitality world in 2011 after following a dream to move to Cornwall. Drawing on y family’s deep roots in the restaurant industry, I bring performance, precision and a contemporary flair to every service.

Since Joining the Harbour Moon I have focused on pushing the boundaries of the guest experience. Earning industry awards for my work in destination restaurants in the past, I proud to lead a world class team including a visionary new chef, and dedicated front of house manager t ensure the Harbour Moon reaches its full potential as a premier destination.

I am Charlie, Head chef at the Harbour Moon. For me cooking is an art form that engages every sense. My journey began at an early age, born out of necessity to navigate a severe nut allergy, which quickly evolved into a life long culinary obsession with precision.

I moved to Cornwall to refine my craft under the mentorship of Nathan Outlaw. Now, after several years of expert instruction, I am bringing my own vision to the Harbour Moon. As a musician, I view every dish as a composition, balancing local sustainable ingredients to create a symphony of flavours that celebrate the very best of the Cornish coast. Like my music, my food is structured and balanced with an unforgettable soul.

After years of visiting the Harbour Moon as a loyal regular, I decided to step behind the scenes and join the team! With over 3 decades of experience in the food and beverage industry, my mission is simple, ensuring service is as spectacular as our water front views. I’m passionate about providing a 5-star experience for every guest, making sure that the care you receive perfectly matches the quality of our menu. It’s a joy to now serve the guests in the very place that has been my own favourite local spot for years.
